Spinach Pinwheels

Think Pizza Rolls but Better!

Spinach pinwheels
Ingredients:
- 1 bundle of fresh spinach chopped into small pieces
- Half of a medium onion diced small
- 3-4 cloves of garlic minced
- 1/2 cup of sour cream
- 8 oz bag of shredded mozzarella & provolone cheese
- 2 oz of softened cream cheese
- 1 package of pizza dough
- 2 tsp of melted butter
- Seasonings of your choice
- Any additional toppings you want like pepperoni.
Directions:
- Pre-heat oven to 375º
- Chop all of your vegetables.
- Sauté the onion until they start to turn translucent. Add spinach & season to your liking & add garlic once spinach starts to wilt & sauté for a few more min.
- Remove spinach filling from pan & let cool a bit before placing into a bowl.
- Add cream cheese & sour cream to the spinach mixture & mix well. Add about half of your shredded cheese and mix.
- Roll out your pizza dough & spread the spinach mixture on top in an even thin layer (like that of cinnamon rolls). Top with a layer of cheese and roll into a log from the “long side” of the rectangle.
- Melt your butter & set aside
- Cut your pinwheels into even pieces & place into a muffin pan with the “spiral” facing up. At this point you can add any additional toppings like pepperoni on top. Pour on some melted butter & top with more cheese.
- Bake for 10-15 min or until the pinwheels are golden & fully cooked in the middle.
- Serve with warm marinara for dipping & enjoy!
